Mary Ann's Famous Coconut Pie


3 egg yolks

Dash of salt

3/4 cup sugar

3 cups milk

2 tablespoons butter

1/2 cup cornstarch

1 cup shredded coconut

1/2 teaspoon vanilla extract

1 baked 9" pie shell

3 egg whites (for meringue)

Coconut for garnish

In a double boiler, beat the egg yolks, salt, sugar, butter, and milk together.  When the water in the double boiler starts to boil, mix the cornstarch with a little water and add to the egg yolk mixture.  Cook until mixture is thick, then add the coconut and vanilla extract.  Pour mixture into the pie shell.  In a separate bowl, beat the egg whites till foamy.  Add 1 tablespoon or sugar and a little cream of tartar and continue beating until stiff peaks form.  Spread meringue on top of pie, garnish with coconut, and place into the oven.  Bake at 350 degrees till meringue is browned.
