Zucchini Bread


2 c sugar                   

1 c vegetable oil      

3 eggs

2 tsp baking soda

1 tsp salt

1/2 tsp baking powder

2 tsp vanilla              

3 tsp cinnamon

1 c chopped nuts         

3 c all purpose flour  

At least 2 c. chopped zucchini; do not peel (I have used up to 3 cups)

Blend sugar and oil. Add eggs, and then add baking soda, salt, baking powder, vanilla and cinnamon.  Fold in flour and zucchini, and then add nuts.  Bake 350 in 2 greased and floured loaf pans for 50-60 min. Can serve with Cool Whip or ice cream.
