Mississippi Mud Cake


2 cups sugar 

1 cup shortening or butter 

4 whole eggs 

1/3 cup cocoa powder 

¼ teaspoon salt 

3 teaspoons vanilla extract 

1 cup chopped nuts, pecans or walnuts 

1 ½ cups plain flour 

A 10-oz. Pkg. Miniature marshmallows 

Preheat oven to 350.  Cream together sugar and shortening (or butter).  Add eggs one at a time, and beat by hand.  Sift flour, cocoa powder, and salt.  Add vanilla extract and nuts.  Pour mixture into a greased and floured baking pan, 9 X 13.  Bake for 30 minutes. 

Remove from oven, pour marshmallows on top of cake, return to oven and bake another 10 minutes.  Cool cake for one hour and add this icing:

 1 box powdered sugar     

1/3 cup cocoa powder    

1 teaspoon vanilla extract    

1/3 cup milk    

1 cup nuts

2 sticks butter 

Sift sugar & cocoa.  Mix with melted butter  Add milk & vanilla  Add nuts & spread over cooled cake.
