INGREDIENTS:
1- 1½ cups flour
1 tsp baking soda
1-1/4 cups butter, softened
1 tsp cinnamon
3/4 cup packed brown sugar
1 tsp salt
3 cups old fashioned oats
½ cup sugar
1 cup chopped walnuts or pecans, lightly toasted
1 egg 1 tsp vanilla
DIRECTIONS:
1. Preheat oven to 375 degrees F.
2. Lightly grease cookie sheets.
3. Combine first set of dry ingredients in a large bowl with a wire whisk.
4. In a separate bowl, cream the butter and sugars. Add egg and vanilla. Combine completely.
5. Slowly add flour mixture until combined. (I like to use my stand mixer to make this cookie dough. As the mixer is running on low, I slowly add the flour mixture.)
6. Hand stir-in oats and nuts.
7. For Drop Cookies: Drop by rounded tablespoons onto cookie sheets.
8. Bake for 8 to 9 minutes or until done.
9. Take from oven and allow to cool on cookie sheets for 1 to 2 minutes.
